Plenty of ingredients are available in reduced- or less-sodium versions. The best example is soy sauce. My standard bottle is always one with less sodium, and I have never found the seasoning lacking.
Low-sodium foods are considered 140mg or less ... so check the serving size when reading the label. For example, soy sauce has 878mg per tablespoon, but it's easy to use more than one tablespoon.
